Smoked Buffalo Chicken Dip

A delicious and creamy dip for any occasion with the perfect amount of spice.

Ingredients

  • 16 ounces brick-style cream cheese
  • 1 cup buffalo sauce
  • ½ cup ranch dressing
  • 1 cup grated mozzarella cheese
  • 2 cups cooked chicken chopped or shredded
  • blue cheese crumble over top to taste
  • green onions (finely chopped) sprinkle over top to taste

Instructions

  • Preheat the grill to around 350°F (177° C).
  • Add the cream cheese to a large mixing bowl and beat with a hand mixer until smooth.
  • Add the buffalo sauce and ranch dressing to the cream cheese and mix until well combined.
  • Add the chicken and grated mozzarella cheese to the bowl and stir until all of the ingredients are well incorporated.
  • Pour the mixture into a 10" cast iron skillet and spread around into an even layer. Place on the grill over indirect heat. Stir every 10 minutes or so until it's heated through and the cream cheese is completely melted.
  • Once it's heated through and the cream cheese is completely melted, remove from the heat. Top with additonal buffalo sauce, blue cheese, and green onions if desired. Let cool slightly before serving.

Notes

Tips
  • Set your cream cheese out about an hour before making the dip. This will make it softer and easier to mix.
  • If you want even more smoke flavor, use hickory or pecan wood while on the grill.
  • Swap out the ranch dressing for blue cheese dressing for even more blue cheese flavor.
  • Make sure your ranch and buffalo sauce are at room temperature. Otherwise it could make your cream cheese lumpy and not smooth like you want.
  • Substitute the mozzarella cheese for cheddar or gouda to try different flavors.
Baking Instructions
  1. Heat your oven to 350°F (177°C). Spray an 8 inch square baking dish with non-stick cooking spray and set aside. You can also use a 10 inch cast iron skillet if you prefer.
  2. Mix the dip just as you would if making for the grill. 
  3. Scoop the mixture into the prepared baking dish or cast iron skillet and place in the oven for 25 minutes or until it's warmed through and bubbling around the edges.
  4. Remove from the oven and allow to cool slightly before serving. Top with additional buffalo sauce, blue cheese crumbles, and green onions if desired.
Store left over buffalo chicken dip in an air tight container in the refrigerator for up to three days.
