Summer is here and grilling season is in full swing. One food that is excellent to throw on the grill are mushrooms. You might have seen several types of mushrooms growing around your landscape or your favorite hiking trails. While those varieties may not be edible, these baby portobello’s certainly are!
Although they are in season during the fall and winter months, mushrooms are available year round and are very versatile when grilling. They are a great addition to any meal because they are packed with antioxidants, riboflavin, potassium, and most importantly, flavor! Whether you think you like mushrooms or not, once you try this easy recipe you will be craving them all of the time. This recipe will turn a seemingly boring ingredient into a delicious appetizer or side that can be enjoyed year round.
Ingredients For This Recipe
The ingredients you will be using are:
- Baby Portobello Mushrooms– best to use because they can be hollowed and stuffed
- Cream Cheese– adds a creamy, savory flavor to the mushroom
- Cheddar Cheese & Bacon Bits– used in the filling and as a topping.
- Salt, Black Pepper, & Garlic Powder– add a pinch of each for flavor
How To Prepare The Mushrooms
Using a damp paper towel, thoroughly clean each mushroom and remove the stems. It is best not to clean the mushrooms directly under running water to prevent them from becoming slimy. Once the mushrooms have been wiped clean and the stems removed, mix the cream cheese, cheddar cheese, bacon bits, and seasonings in a mixing bowl until well combined. Do not soften the cream cheese. This will help the mixture to stay firm and make stuffing the mushrooms easier. It also keeps the filling from becoming too runny while grilling.
Stuff each individual mushroom with the cream cheese mixture and top with additional cheddar cheese and bacon bits. Make sure not to over stuff the mushrooms with the filling to prevent it from overflowing while grilling.
How To Grill Stuffed Mushrooms
Finishing these mushrooms over the grill is my favorite way to prepare them. It is also super simple! All you need to do is heat your grill to around 375°F, I like to clean and stuff the mushrooms while the grill is heating up. Once the grill is at the right temperature, simply place the mushrooms on the grill over indirect heat for 15-20 minutes. Once the filling is melted and warmed through they are ready to come off. Let them cool slightly, then serve and enjoy!
How To Bake Stuffed Mushrooms
Grilling these stuffed mushrooms is my favorite way to make them, however if you don’t have a grill or if your BBQ get’s rained out these can be baked in your oven as well. To bake the mushrooms, preheat your the oven to 400°F. Then, line a baking sheet with parchment paper or foil. Next, arrange the filled mushrooms on the lined baking sheet and place it in the oven. Let them bake for 10-15 minutes or until the mixture is warmed through and the cheese on top is melted.
Tips
- Top the stuffed mushrooms with some chopped green onions once they are done cooking.
- For extra flavor, try sprinkling some of our BBQ Rub on top.
- To make these vegetarian, simply leave out the bacon bits.
- Make sure to use only edible mushrooms like these baby portobellos. There are many varieties of mushrooms that aren’t edible and can be harmful to your health.

- 16 ounces Baby Portobello Mushrooms
- 4 ounces Cream Cheese
- 3 tablespoons Cheddar Cheese shredded
- 3 tablespoons Bacon Bits
- Salt to taste

Instructions
- Heat grill to around 375°F.
